Skillet Cornbread

  • Cast iron skillet
  • 1-3/4 cup cornmeal
  • 1-1/2 cup flour
  • 1-1/4 tbls baking powder
  • 1 tbls sugar
  • 1 tsp salt
  • 4 oz yogurt
  • 16 oz milk
  • 3 eggs
  • 2 tbls oil
  • 2 tbls bacon fat/lard

Heat oven to 450 degrees F.

Mix wet and dry ingredients separately. Add wet to dry and mix thoroughly.

Heat cast iron skillet in oven and add fat til sizzling.

Pour in batter and bake 20 minutes.
