Latkes

5 medium potatoes, peeled and grated
2 beaten eggs
3 tablespoons flour
1 medium onion, diced
Salt, black pepper and cayenne to taste

Mix flour, eggs, salt and pepper until smooth. Pour over onions and potatoes. Coat well. Fry in 1/8 inch vegetable oil. Serve with applesauce and sour cream.
